Tato mezinárodní norma popisuje stanovení aktivity - amylázy u obilovin pomocí čísla poklesu (FN) metodou podle Hagberga-Pertena. Tato metoda je použitelná pro zrna obilnin, zvláště pak pro pšenici, žito a žitnou a pšeničnou mouku, pšenici tvrdou (durum) a pro semolinu z pšenice tvrdé. Tato metoda není použitelná pro stanovení nízkých hladin aktivity - amylázy.

Převedením čísla poklesu (FN) na číslo ztekucení (LN) je možné použít tuto metodu pro odhad složení směsí zrna, mouky nebo semoliny se známými hodnotami čísel poklesu (FNs), potřebných pro přípravu vzorku s požadovaným číslem poklesu (FN)
