Tato část normy ISO 6557 specifikuje dvě běžné metody pro stanovení obsahu kyseliny askorbové v ovoci, zelenině a ve výrobcích z nich.
metoda A: titrace s 2,6-dichlorfenolindofenolem
metoda B: spektrofotometricky 2,6-dichlorfenolindofenolem po extrakci xylenem
Metodu A lze použít pouze v nepřítomnosti interferujících látek (viz 2.6).
Metoda B je vhodná pro výrobky z ovoce a zeleniny v silně zbarvených roztocích
