Tato část normy ISO 7543 specifikuje metodu stanovení celkového obsahu capsaicinoidů v celých nebo mletých chilli paprikách (obvykle Capsicum frutescens L.) a v jejich extraktech (oleoresinech) vysokoúčinnou kapalinovou chromatografií. Tento obsah se vypočítá z celkového obsahu capsaicinu, nordihydrocapsaicinu a dihydrocapsaicinu, vyjádřeného jako vanilylamid kyseliny nonylové, což je vybraná referenční látka. Tato metoda umožňuje separaci capsaicinu a vanilylamidu kyseliny nonylové.
