Tato pátá část normy určuje zkušební metodu pro stanovení: A. titrovatelných kyselin (veškerých kyselin), B. těkavých kyselin. Všeobecná ustanovení jsou uvedena v části 1 této normy. Podstata normalizovaných metod a postup při provádění normalizovaných zkoušek je (podrobně) popsán. Norma tedy stanovuje postupy pro provádění některých zkoušek (metod) zjišťování a/nebo ověřování znaků jakosti, důležitých z hlediska hygieny výživy. ČSN 56 0240-5 byla schválena 2.3.1982 a nabyla účinnosti od 1.5.1983. Nahradila čl. 30 až 33 ČSN 56 0240 z 23.7.1964. Senzorické zkoušení bylo přepracováno a podstatně rozšířeno
