Tato pátá část normy určuje metody stanovení vody u všech dehydratovaných výrobků a ochucovadel neobsahujících vysoké množství cukru: Metoda A - Stanovení vody (referenční metoda), Metoda B - Stanovení vody na vahách na stanovení vlhkosti. Všeobecná ustanovení platná pro tuto část normy jsou obsažena v ČSN 58 0703-1. Norma také (nepřímo) stanovuje některé kvalitativní znaky (jakosti) významné pro hygienu výživy, protože obsahuje požadavky na provádění metod jejich zjišťování (ověřování). ČSN 58 0703-5 byla vydána v březnu 1999. Tato část spolu s částmi 1 až 4 a 6 až 12 nahrazuje ČSN 58 0703 z 21.8.1963 v celém rozsahu
