Tato norma stanoví postup při braní vzorků, při smyslovém, chemickém, fyzikálně chemickém a mikrobiologickém zkoušení všech tržních druhů droždí, tj. kvasinek druhu Saccharomyces cerevisiae Hansen, rasy drožďářské. Podstata normalizovaných metod a postup při provádění normalizovaných zkoušek je (podrobně) popsán. Norma tedy stanovuje postupy pro provádění některých zkoušek (metod) zjišťování a/nebo ověřování znaků jakosti, důležitých z hlediska hygieny výživy. ČSN 56 0187 byla schválena 23.7.1975 a nabyla účinnosti od 1.1.1977. Nahradila ČSN 56 6810 z 29.3.1967
