Touto desátou částí normy se stanoví kyselost u dehydratovaných výrobků a ochucovadel. Všeobecná ustanovení platná pro tuto část normy jsou obsažena v ČSN 58 0703-1. Norma také (nepřímo) stanovuje některé kvalitativní znaky (jakosti) významné pro hygienu výživy, protože obsahuje požadavky na provádění metod jejich zjišťování (ověřování).
